In our area three fabolous native white vines are cultivated for centuries, each one of high quality and personality with very different characteristics between them. Greco vine more mineral, more structured and complex Fiano vine, Falanghina vine fresh and aromatic. In our production are rightly present all three, each with its peculiarities.
Obtained from the vinification of selected grapes of autochthonous Falanghina and Coda di volpe vine stocks, the Clarum de I Capitani fully represents our territory with undeniably dynamic fragrances and tastes.
Mid hill Irpinia territories.
Falanghina (90 %) e Coda di volpe (10 %). Guyot cultivation and traditional method.
90 quintal per hectare with 70 % wine return.
Vintage beginning of October, soft grape crushing and fermentation in controlled temperature.
Straw yellow with golden reflex.
Intense with marked fresh fruit smack and flowery notes.
Dry, soft.
Falanghina is a semi-aromatic grapevine with hints of delicate net but that well accompanies traditional Mediterranean dishes based on fish and crustaceans.
Ideal pairing with pasta or rice with seafood and grilled or fried fish. Excellent as an aperitif or to accompany flans and soft cheeses.
In a pan fry the garlic and oil, add chopped asparagus and a ladle of boiling water, add salt and finish cooking by adding finally shelled mussels. Cook the spaghetti and stir for a few minutes in hot sauce previously prepared. Serve by adding a pinch of pepper.
Il Clarum 2009 è stata una buona annata con un estate calda che ha portato a piena maturazione le uve senza però abbattere eccessivamente le acidità.

Falanghina is a white grape variety whose name derives from the Latin "phalange" that means "tied to the pole". Its origins are uncertain, although it is an ancient vine, its the first traces date back to 1825.
Currently it is spread mainly in Campania region where it finds its greatest expression. One of the features of this semi-aromatic varieties is that the wine made from it keeps well organoleptic characteristics to changes of the production area. Nevertheless, the Clarum expresses a more mineral expression from the other area because it's produced from Falanghina grapes grown near our company in Torre le Nocelle and with low percentages of grapes Coda di Volpe.
The grape ripens in the second half of September and is usually harvested in early October. It is mildly productive, vigorous, not very smooth and requires a warm and dry climate. It's got a robust strain, with branch of medium length, slightly branched, while the leaf is of medium size, three-lobed, wedge-shaped, almost entire, light green, with downy underside. The bunch is long, conical, moderately compact, winged. The berries are small, spheroid, yellowish-gray, with skin thick, crunchy, sweet and sour.
