The love of our lands, respect for tradition and the search for true emotions inspire our wines of excellence. One red and one white wine are produced in limited numbers for true fans with a big personality and uniqueness. They are a real concentrate of our best philosophy of winemakers without patterns and compromises, a free and magnificent interpretation of ourselves.
The Faius of I Capitani is a project that pursues excellence. The highest expression of the grand white vine stocks of Irpinia (Fiano Greco and Coda di Volpe). A wine with a powerful structure and a typical feature of mineral freshness able to evolve with time. Refining in small oak barrel for a period of 6 - 8 months adds balance and personality. A really unique wine.
An experimental vineyard in the Bosco Faiano locality of Torre Le Nocelle(AV), its clay-like and chalky soil looks to the southwest in a hilly zone located at 360 m above sea level.
Greco, Fiano and Falanghina from experimental implants in the Bosco Faiano district with guyot cultivation methods and very low yields (about 45 quintals per hectare).
Harvested by hand, at the end of October the slightly overripe grapes undego a pre-fermentation maturation on their peelings, and an alcoholic fermentation with autochthonous yeast in first or second passage oak barrels.
In small European oak barrels (barriques) with the permanence of fermentation yeast for 6 - 8 months.
Straw yellow with evident golden reflex.
Delicate, elegant but persistent, with a hint of vanilla, roasted almonds, ripe yellow fruits and citrus peels.
Dry or soft, glycolic, mineral.
Faius is a strong and elegant wine at the same time. It's a white wine that expresses intense varietal aromas with a complex and refined nose, a broad and enveloping taste. The evolution in the bottle ennobles it every year, following a natural and charming evolution. Good pairing with soup and grilled fish, white meats, pies, soft cheeses, rustic, soups in general. You will be surprised anyway.
Soak the mushrooms for about an hour, then squeeze them and brown them in a saucepan with garlic, olive oil and parsley. Peel chestnuts totally and boil them. Add chestnuts and mushrooms together with part of the cooking water, add salt, then cook for 10 minutes. Serve hot on crouton or chunks of fried polenta.

Faius is the name of the man who owned the hill where now stands our company at "Bosco Faiano" at the time of Roman Empire.
Our Faius comes from an ambitious and challenging project: concentrate the best of our white native grapevines in a unique bottle that can evolve and improve over time. This challenge is very difficult when it concerns to a white wine. The great quality of our grapes and the wise use of oak with above all a lot of experience, have enabled us to get this special wine for palates not standardized, for wine lovers looking for something special to keep. Fermentation in oak barrel with repeated batonage (put in suspension by stirring of the good lees) promotes the production of the wine's natural defenses against oxidation and imparts a sweet spiciness on the palate.
Faius is undoubtedly our white wine of excellence ... a small jewel of patient workmanship.
