Aglianico is the most important red grape of southern Italy and it's in the inner part of Campania specially in the Avellino province which reaches its maximum expression. Grape of absolute value and quality lends itself to very different but always excellent wines. From our vineyards we produce three great Aglianico-based wines: Guaglione a young and fruity wine, Jumara a medium aging wine with a wonderful elegance and Taurasi, the top of the range, a long aging wine famous all around the world and called by the wine experts: Barolo of the South.
The wine represent the primum movens of the Farm “I Capitani” junction between past and present, the real soul of the Farm. And the soul is all in the Taurasi “ Bosco Faiano”, wine of excellent structure, obtained from the vintage of selected grapes of the Aglianico Taurasi grapevines.

First week of November, hand picked grapes with a choice of the best grapes in slight overripening. After picking the grapes off the stalks the must ferments on the skins for about 15 days in controlled temperature.
In French-oak barriques for 12-18 months months; fining in bottle since the third year of the vintage or longer.
Deep burgundy with sparkling shades of red.
Ethereal, complex, with notes of licorice and vanilla against a refined background of berries. Tertiary features are well highlighted, pleasantly balsamic with pink pepper and exotic spice.
Full bodied. Dry, rounded, harmonic, with an intense and persistent aftertaste, reminiscent of sour black cherries and berries. Complex, long-lasting and all embracing.
Taurasi is an important, complex, and long aging wine that evolves and grows so surprising if you have the patience to wait. True born Aglianico, great structure and complexity, with few other big Italian reds, represents the great italian tradition of winemaking. Ideal for red meats and game, ripe or spicy cheeses. Thanks also to a very well refined and velvety tannins is superb with a rare grilled t-bone steak: tasty and tender.
In a large saucepan fry in the oil the carrot and the onion and when the onion is golden brown add the meat (cut into pieces). Braise on high heat, add salt and pepper. Add wine and cook over moderate heat for about 60 minutes. Follow the cooking, if necessary adding a ladle of vegetable broth or warm water to keep on with meat cooking. When the meat is well cooked add the radicchio and cut into strips washed, cover the saucepan and cook until the radicchio will become creamy. Correct with salt and pepper and hot sevire.

Our Taurasi is a "Cru" made from aglianico grapes of our vineyard "Bosco Faiano". The selection made on each grapevine and the long period of aging in oak barrels make it a product of absolute quality, a real jewel to be kept in the cellar without haste.
In general, "Taurasi" is one of Italy's most important red wines with a great aging potential that has been recognized as a DOCG wine in 11 March 1993 to be preserved as a top italian production. Its production area is located in 17 municipalities in the province of Avellino. It could be made from a minimum of 85% Aglianico of Irpinia and the other 15 % could be other black grapes, not aromatic, and harvested in the authorized production. The vinification and aging must be performed within the territory of the province of Avellino. The aging is expected to be at least 3 years of which at least one in oak barrels, while for the type "Reserve" must be subjected to an aging period of at least 4 years, of which at least 18 months in oak barrels.
The Aglianico grapevine has probable Greek origin (from the word "ellenico") and since antiquity has settled in the provinces of Avellino and Benevento and Basilicata region with its different varieties "Aglianico del Vulture". Its ideal habitat is calcareous clay soils of volcanic origin in areas of medium altitude and extreme temperature changes daily. Has medium size leaf, five-lobed dark green, compact cluster, cylindrical-conical, thick skin of blue color rich in tannins. The ruby-colored wine with aromas that recall just filled the land of origin. It's the base of the most important long aging red wine of Southern Italy: Taurasi. Among the best red grapevines of Italy it's characterized by a late harvest (late October early November).
